Fermented condiments offer a new world of nutrition and flavor to year round cooking. Fermented condiments such as mustard, ketchup, hot sauce, soy and tamari sauce have far more complex flavors than plain ones. They are an easy was to add zest and tang to a meal. Naturally preserved, these nutritious super foods will give you a unique edge in your kitchen.
We will make my famous Fermented Worcestershire Sauce (with a vegan option); Fermented Hot Sauce; Fermented Garlic (amazing rich flavor with less bite); Fermented Lemons (a famous Persian product); Turmeric-Ginger Sauce; and Fire Cider- the legendary folk remedy which is zesty vinaigrette for the relief of cold and flu symptoms.
Students will bring some basic kitchen tools and jars.

Each student will have their own station in a very clean, spacious studio with excellent HVAC and HEPA filtration.
